Yummie Veggie Burritos



Ingredients:
2 tsp olive oil
1 large yellow bell pepper
1 large red bell pepper
1 large green bell pepper
1 cup broccoli
1/2 medium onion
1/2 cup carrots
1 can black beans
1 packet fajita seasoning (I used Taco Bell’s)
4 large tortillas (I used Mission Carb Balance whole wheat tortillas)
2 slices cheese
water
(PP+7 per burrito)

Slice the bell peppers and chop the broccoli, onion and carrots. Place in a heated skillet and cook with olive oil until tender. 

 Add the fajita seasoning and some water if the vegetables are dry (add more as needed). Once thoroughly mixed, add the black beans and heat until mixture has reached desired temperature. 



 Open a tortilla and place 1/2 of the slice of cheese in the middle. Fill the tortilla with 1/4 of the veggie mixture, and roll up like a burrito. Repeat for the remaining 3 tortillas.



 In a skillet, heat some more olive oil or cooking spray. Place the wrapped burrito in the skillet and brown all around.
